The Incredicookie

You will understand why I titled this why I titled this as I did when you make the recipe. These cookies are gluten free, dairy free (except for the dark chocolate chips, but it is minimal dairy), and delicious. 20130921_165446 They are very easy as well, to put this in perspective, I just made two batches in a college dorm. 🙂


  • 1/2 cup peanut butter
  • 1/2 cup brown sugar
  • 1 egg
  • 1/2 tsp baking soda
  • 1 1/4 cup instant oats
  • 1/2 cup chocolate chips


  • preheat oven to 350°
  • cream together the peanut butter, and brown sugar, until fluffy ( I would describe it more as creamy)
  • add egg, beat into mix
  • add baking soda, oats, and chips
  • make globs out of the dough and put on cookie rack
  • bake for 6-8 minutes
  • wait for them to harden enough to transfer to cooling rack or towel
  • Then transfer cookies to mouth 🙂
